Superfood Salad

Feta, Walnut & Pear Salad
Serves 2 people

Ingredients

2 x Pears
60g Feta cheese
30g Walnuts
Fresh Beetroot
Green Peppers
Cucumber
Lettuce leaves – rocket, spinach, baby leaf etc
80g of either Quinoa/Chickpeas or 6-8 small baby potatoes
Salad dressing → 1 tbsp white wine vinegar

3 tbsp fresh lemon juice
1/2 tbsp Dijon mustard
1 tbsp shallot or onion, minced fine

1/2 tsp. fresh thyme (or 1 tsp. dried thyme)
1/2 tbsp olive oil

Method
Depending on what carbohydrate source you are having, cook that first. Quinoa and chickpeas have a good amount of protein in them, so go for that if you can. Season with small bit of salt and pepper

All you do here is literally chop up everything, and throw it all into one big bowl.

Make the salad dressing by putting all into a cup and whisking.

When your carbs are cooked and drained, add them to the bowl with the salad dressing.

Easy as that!
