Low Calorie Family Dinner

Spaghetti Bolognese

Ingredients
Low Fat Cooking Spray
400g Extra Lean Minced Beef
1 Large Finely Chopped Onion
2 Crushed Garlic Cloves,
2 Chopped Celery Sticks
1 Large Chopped Carrot
400g Tin of Chopped Tomatoes
200g Sliced Mushrooms
2tsp dried Mixed Italian Herbs
2 tbsp Tomato Puree
150ml (1/4pint) Organic Beef or Vegetable Stock
200g Wholewheat Spaghetti (40-50g per person)
2 tsp Parmesan Cheese

Spray a large saucepan with low fat cooking spray. Add the lean minced beef, cooking over a high heat until browned. Add the finely chopped onion, crushed garlic cloves, celery sticks and the chopped carrot. Cook for 4-5 minutes.
Stir in the tin of chopped tomatoes, sliced mushrooms, dried mixed herbs, tomato puree and the beef/vegetable stock. Simmer for 25 minutes, removing the lid halfway through.
Meanwhile, cook the spaghetti in boiling, lightly salted water until just tender, about 8-10 minutes.
Serve, topping each portion with ½ tsp parmesan cheese.

More Options:
To convert to a chilli, replace the dried herbs with 1-2 tbsp medium chilli powder and 1 tbsp cumin, add 1 large (410g) tin red kidney beans, drained, and served with 200g cooked brown rice instead of pasta, omitting the parmesan.
For a veggie version, replace the beef with 400g Quorn mince and sprinkle each portion with 1½tbsp parmesan cheese.
