Healthy Turkey Chilli Recipe

Turkey Chilli Recipe – Serves 2-3

Ingredients

400g turkey mince

400ml tin chopped tomatoes

400ml water

400ml tin kidney beans

1-2 tablespoons tomato puree

2 cloves garlic

1/2 white onion

1 birds eye chilli

Powders; Chilli, cumin, coriander, smoked paprika, cayenne pepper

Salt & Pepper

2 pinches of sugar

Fresh coriander

 

  • Gently fry chopped onions in olive oil, until they are translucent
  • Add chopped birds eye chilli and crushed garlic
  • Fry mince, browning on both sides
  • Add all the powders, as much as you like for extra spice
  • Add chopped tomatoes, water, tomato puree, S&P and sugar
  • Bring to the boil and reduce to simmer for 45 minutes

 

Homemade guacamole

1 large ripe avocado

1/2 beef tomato

1/4 onion (optional)

1 glove crushed garlic

1/4 birds eye chilli

Juice of 1 lime

Handful fresh coriander

S&P

 

  • Throw all ingredients into a blender/food processor and blend for 20-30 seconds

 

Measure 30-40g brown rice per person, and cook following instructions on the bag

Serve with a side salad and your homemade guacamole
