Grilled Cajun Salmon with Salad
This is the easiest dinner to whip up. Just grill a piece of salmon with some cajun powder and a little bit of olive oil. Turn the salmon when one side is brown.
For the salad – chop tomatoes, peppers, cucumber and avocado into cubes, and mix in a bowl with mixed seeds, lemon juice, salt and pepper, and red wine vinegar. You can add any other veg, I’m sure onion would be good here too, but I just hate onions.
I just poured a small bit of balsamic glaze over the top of the whole dinner. So you’ve got about 3 portions of veg, plenty of protein and good fats and omega oils from the salmon here, and no carbs.
This is a good dinner if you’ve had carbs for breakfast and lunch, or don’t need carbs to fuel an evening workout.
